Most Japanese green tea is steamed. This one is not — and the difference is immediately apparent.

Highlights

  • Kamairicha (pan-fired tea) from Takachiho, Miyazaki — a production method that predates steaming in Japan, now rare even within the country. Pan-firing produces floral and fruity aromatics that steamed green tea simply cannot replicate.
  • Takachiho is one of Japan's most remote mountain regions — the valley where Japanese mythology places the descent of the gods. The isolation shapes the terroir as much as the farming.
  • 720ml, room temperature stable — designed for a dinner table. Four to six servings per bottle, no equipment needed beyond a glass.
  • Nothing like it on American shelves — a shelf-stable, single-origin premium bottled tea, sent directly from CRAFT BREW TEA Studio in Shizuoka.

Producer's Story

CRAFT BREW TEA Studio is a precision brewing workshop within Marushichi Seicha — a Shizuoka tea house with over 100 years of history — launched in 2021 after two decades of preparation. Each bottle is made from one cultivar, one farm, one harvest day, brewed at 3–5× normal leaf concentration and sealed at peak extraction. The same discipline, every time. The full story of CRAFT BREW TEA lives on the Imperial Yame Gyokuro page.

Tasting Notes

Pale gold — lighter than most green teas, with a clarity that hints at what follows. The aroma is floral and faintly fruity: lychee, white grape skin, a quiet roasted warmth underneath. On the palate: light body, surprising sweetness, a clean toast note in the finish. Dry enough to carry through a meal; distinctive enough to hold attention on its own.

Pairing Ideas

The pan-fired character makes this the most versatile of the five for Western food pairings. Pour alongside grilled salmon, white fish in butter sauce, or a cheese board — it bridges Japanese and European flavors with ease. For a non-alcoholic pairing with charcuterie or a mezze spread, this is the first bottle to open. Its light, dry finish also works between courses, cleansing the palate the way a fine Champagne would.
