Producer’s Story
Noriyuki Enami left a career as an automotive engineer to tend a citrus mountain in Hamamatsu, Shizuoka. Since entering the World’s Original Marmalade Awards at Dalemain Estate in 2017, he has won Gold or above every year — including two Double Golds, the highest honor, the first ever awarded to a Japanese maker. Cooking Ideas
Spread over buttered toast and eat it slowly — the sansho-like heat builds over the first few bites in a way that no other marmalade does.
Stir into a cocktail or a mocktail with sparkling water and fresh mint; the late spice makes it drink like something more considered.
Use as a marinade base for chicken: loosen with a little soy sauce and rice vinegar, then leave overnight. The citrus acid tenderizes; the heat stays.
Add a small spoonful to the dressing of a grain bowl — farro, barley, or rice — with roasted vegetables and a soft egg.
